WinterBoard – customize interface
I’m pretty happy with how this thing is running right now. Even the AT&T network seems like it’s getting better. No hurry to switch to a Nexus One right now…

Cydia crapped out on me, so I can no longer load some of the apps you mention, plus the whole backup/restore/jailbreak is such a pain I’m the ass that I don’t do anything about it.
Also, almost everything you’ve tweaked there is possible sans-jailbreak in Android. The N1 launch has been a disaster, but there are definitely options for people who don’t absolutely have to have an iPod in their phone.
